"FEDELE'S DELIGHT"
"hot" Italian sausage with roasted bell peppers



Ingredients for approximately 6 servings
4 green bell peppers
1 red bell pepper
1 yellow or orange bell pepper
2 lb. Of hot Italian sausage
1/8 cup of olive oil
1 tablespoon of crushed garlic
1 teaspoon of ground fennel seed
1 teaspoon of seasoned pepper
1/2 cup of dry red wine
Salt to taste

*Bar-B-Q Italian sausage under a medium/high heat until all sides are slightly charred. Approximately 20 to 30 minutes or until sausage reaches an internal temperature of 180 degrees. When cooled, cut into 2" thick pieces on an acute bias and hold
*Seed and cut the bell peppers into medium strips. If you cut the bell pepper in half, and each half into 4 or 6 strips, you will get the recommended size.
*In a large skillet under a medium/high heat saute the bell peppers until they are blistered and brown.
*Reduce heat to medium. Add rest of ingredients and simmer for 2 to 3 minutes.
* Fold in the sausage and place in a large baking dish and bake at 350 degrees or 10 to 15 minutes uncovered.
